Lately I’ve been trying to snack on more fruit and although this isn’t the healthiest option for a fruit salad, this is a traditional recipe that works as a great dessert alone or spooned over a scoop of ice cream!
Ingredients: 100g sugar, 250ml water, 1.5lbs fruit of your choice, 1 tbsp lemon juice, 1 tbsp lime juice
Method: In a saucepan dissolve the sugar in the water over a low heat and bring to the boil. Once boiling you have your sugar syrup – remove from the heat to cool. In the meantime prepare your fruit (1.5lbs unpeeled fruit should be roughly 1lb fruit once prepared). I chose apples, pears, grapes, strawberries and bananas but any fruit of your choice will do – kiwis and clementines are great for adding more colour. Add the lemon and lime juices to the sugar syrup and stir thoroughly. The citrus juices help to stop the fruit from oxidising and turning brown. Then simply add your fruit to the cooled liquid in a serving bowl. This is best eaten on the day it’s prepared or the day after.
